One more thing

I forgot to add one thing to my Bucket List…. I want to spend one day a week with no computer use. No internet, no recipes, no blogging and no facebook! I’m going to do this every Friday, and if I am enjoying it I may increase it to 2 days. Wish me luck!

Bucket List

I’ve been reading a few blogs lately where the writers have updated their readers on how they did with their summer bucket list (things they want to accomplish within a certain time period and a way to focus on things that are important to them). So I’ve been thinking about what’s important to me and what I want to accomplish in this season of my life (other than reading interesting blogs…). These are personal goals, of course my number one purpose right now is to give Eden what she needs, but a girls needs some goals to work toward in the short term right?

So, in no particular order this is what I want to accomplish by January 1, 2011:

  • Read some scripture at lease once a day
  • Run at least 3 times a week (I recently joined a Learn to Run program at the Running Room)
  • Run the 5km Resolution Run on January 1 (need to somehow find the $50 registration fee though, and warm winter running clothes…)
  • Complete 6 pages (3 two page spreads) in my NZ scrapbook
  • Complete 6 pages in my Eden scrapbook
  • Move (I have to have some easy ones right?)
  • Try more meatless recipes (for health reasons as well as financial)
  • Use cloth diapers exclusively

I think that’s enough goals for now… the last 3 and probably the first will definitely be the easiest to accomplish. We’ll see about the others. The scrapbooking will probably be the toughest considering the NZ one has been in the works for over 3 years… The running is really important to me because I need some form of exercise and I enjoy running. I gained a lot of weight during my pregnancy and I have really needed some structured way to loose it. This is the first step and I’m really excited about it, it’s a bit of a financial burden which we will hopefully figure out, but I have found something that I really enjoy when it comes to exercise so it’s pretty important that I stick with it.

Menu Plan Monday: Oct. 18 – 24

Hello All! I’m back again with another menu plan. I actually made one last week, I just didn’t get around to posting it. I have a very yummy plan for this week though and I’m looking forward to trying some new recipes and using the slow-cooker more!

Monday: Black Bean & Rice Tostada (delicious! I used this recipe for the taco seasoning)

Tuesday: BBQ Hamburgers with Raw Veggies

Wednesday: Wild Rice and Mushroom Soup

Thursday: Chicken Stir Fry

Friday: Slow-cooker Pesto Spinach Lasagna

Saturday: Little Dipper Pizza Fondu with baked tortilla wraps

Sunday: Crockpot French Toast (lunch) Leftovers for Supper

 

I also made Hummus today.  I finally found a recipe that I like! It turned out absolutely delicious. Here’s how you do it:

Ingredients

1 can of chick peas drained (reserve liquid) and rinsed

1/8 c reserved chickpea liquid

1/2 lemon (squeeze for juice)

1/8 c tahini

1 clove of garlic chopped

1/2 tsp cayenne pepper

3/4 tsp coarse salt

1 Tbs Extra Virgin Olive Oil (approximately)

Directions

Put everything except olive oil in a food processor and blend until smooth. I actually use an immersion blender which works wonderfully. Once chickpeas are smooth. Add a dollop of EVOO and mix again. It should be nice and moist and smooth. Try it and see if it tastes good. If it’s dry add more EVOO.

This is a super simple dip and can be eaten with fresh veggies, mini pitas, or crackers. We love it in our house and it’s super easy to make. Let me know if you try it okay?

Autumn is back and Thanksgiving is coming! I love this time of year! Here’s the menu for the week.

Monday: Pot roast (slow cooker) with potatos, squash and green beans

Tuesday: BBQ Pork chops with homemade applesauce and garden salad

Wednesday: Lentil Brown Rice Casserole and chicken strips

Friday: Pulled Pork with homemade sweet potato fries

Saturday: Thanksgiving Dinner!

Sunday: Leftover Thanksgiving Dinner

Last weeks Italian Sausage and Potato Roast was an absolute favourite! You should try this out, it’s delicious!
