Introducing… Eden Jacquelyn Cross

As you faithful readers have probably noticed we haven’t blogged in a while.  That’s because on July 13 at 7:56pm Eden Jacquelyn Cross was born! She weighed 8 pounds and 1 ounce and was 21 inches long. Since then, she’s been filling out and giving us lots of snuggles.  It’s been quite an adjustment for us, but it’s also been wonderful! Tim’s mom, Doreen, was here for a week to help out with cooking and cleaning and snuggling. It was wonderful to not have to worry about the dishes piling up and whether we were eating food with nutritional value.  My family is coming up this weekend which I’m really looking forward to as well! This blog will probably be mostly about Eden now as she’s the centre of our lives, but I’m sure there will be other little bits of information here and there. One thing worth mentioning is that Tim’s in the middle of applying to both Dal and MUN medicine programs right now. So that’s exciting!

Menu Plan Monday: July 12-18

Another week has come. I’m 39 weeks pregnant so it’s just a waiting game now! It’s also been super hot here in Fredericton with the humidity and I’ve has some massively swollen feet every day – so I’ve been spending a lot of time reading with my feet up. Here’s my menu for the week (unless the baby arrives and then the meals are provided by our wonderful church!!!).

Monday: Grilled Lemon Chicken with Cabbage and Corn Slaw (This is absolutely delicious if you like lemon, we didn’t have anything else with this meal and it was filling and wonderful!)

Tuesday: Spaghetti with Zucchini, Walnuts & Raisins (I bought a Real Simple mag. this week on a whim…that’s where these first two are from)

Wednesday: Homemade Pizza (see last week for crust recipe) + 2 Pizzas, Caesar Salad & Garlic Bread for the Hicks (just welcomed twin boys into their family)

Thursday: Leftovers

Friday: Corny Salmon Cakes & Veggie Macaroni Salad

Saturday: Have it your way Tacos (I like that there are black beans in these)

Sunday: Leftovers

So that it for this week. I’m pretty excited about this menu since last week was pretty lame. I love good food! We also bought a whole bunch of fresh fruit this shopping trip which I love to snack on!

Maybe by next week there will be 3 in the Cross family! (If that’s the case I probably wont be blogging for a while…).  Happy eating!

We went home for the weekend to go to a wedding as well as spend some quality time with my family before the babe arrives. I left my camera at home so I don’t have any pictures of the wedding to post but here are some of the family!

Menu Plan Monday: July 5 – 11

Another week has come! We had a wonderful trip home and ate some delicious food which of course included fresh strawberries from my Dad! We also made jam and now have 8 bottles to do us for a while, thanks mom for your expertise! The food at the wedding was delicious (I wouldn’t have wanted to foot the bill) and involved Lobster Bisque and Grilled Salmon.  We didn’t get back until lunchtime on Monday, Tim went straight to work and I had to get groceries and cook a meal for a woman in our church who just had a baby (an awesome ministry our church has). So I didn’t make a meal plan but I figured a day late wasn’t too bad. It was also 37 degrees with the humidity and my feet were super swollen so after I accomplished all that I relaxed with my feet up for the evening.

So here’s our plan for the week. It’s pretty hot and humid here so I’m going to keep things simple this week.

Monday: Homemade Pizza and Caesar Salad (doubled for the couple with the new baby). I love this recipe for the crust! I added a little ground flax to the mix too.

Tuesday: Leftover Pizza and Caesar Salad

Wednesday: BBQ Sun-dried Tomato Sausages and Garden Salad

Thursday: Zesty Crock-pot Chicken with Couscous

Friday: Spaghetti with Garlic Bread

Saturday: Leftovers

Sunday: Leftovers or Creamed Peas on Toast (Jamieson family favourite)

This of course is subject to change depending on the weather and the fact that I am 38 weeks pregnant! I have a few ideas for upcoming blogs so stay tuned. Oh and we love to hear your comments or thoughts so please comment!
