I know I missed last week…I actually made a plan but didn’t follow it very well and we ended up eating pretty badly…so I was ashamed. I am bound to stick with this week though so I’ve made up one tonight which is certainly doable, and we have a pretty easy week because we’re going home to NS on Friday!!! So I don’t have to worry about the meals for Friday, Saturday or Sunday!
Here’s one recipe I tried last week that turned out pretty good. I didn’t roll them in bread crumbs because I didn’t have any…and I didn’t have any bread to make any. So I rolled them in sesame seeds. They were still good, though I think they were supposed to crisp up a bit more.
As for this week this is the plan:
Monday: Baked Haddock, Mushroom Rice (something like this with the ingredients I have on hand), and a canned veggie.
Tuesday: Leftovers/Fend for yourself day – this is a tricky scheduling day because Tim leaves around 4:30 for the evening after having a late lunch so I have to keep it pretty simple. He doesn’t mind though.
Wednesday: BBQ with Friends (BYOM) we’ll probably have chicken or steak, whatever is on sale! With: veggie salad, couscous, roasted potatoes, and fruit salad for dessert.
Thursday: Pita Pocket Chicken Salad on the way to Moncton plus whatever is left over from Wednesday.
Friday: Home at my parents!!! Hopefully making strawberry jam that night with my mommy.
Saturday: Wedding 4 course meal!!!
Sunday: Supper with the fam!
So that it! It’s a pretty easy week but I’m looking forward to it because of the yummy food and having friends over (who are on vacation from Ontario).

Hope you’ve all been enjoying some fresh strawberries this season. I can’t wait to go home and have the best ones available. You may not believe me but it’s true, ask anyone who has had strawberries at my house!

I just thought I would give a little update on our meals thus far! The Garlic Chicken and Spinach pasta was OKAY…It smelled delicious but the flavour wasn’t there which really surprised me. The bread turned out yummy (if you like hard crust bread) and I would probably make it again because it’s pretty easy…though I don’t really think any easier than making bread normally. Still the crust was nice and crusty and the inside was really moist!

Tonight we had the Pad Thai Burgers and roasted potatoes all cooked on the BBQ. They turned out delicious and are the main reason for me posting right now. The Pad Thai flavour wasn’t overly strong, which I liked because I didn’t like Pad Thai that much when I was in Thailand. But you could have more flavour if you put more sauce (in the recipe) on your burger. We topped our burgers with the suggested toppings (alfalfa sprouts and cucumbers – plus a little cheese – as well as the peanut sauce) and they were delicious! We also used the PC thins multi-grain round buns…definitely my favourite hamburger bun. This recipe is a must try if you want something a little more exciting than regular hamburgers.
As for the roasted potatoes we just diced them, sprinkled them with olive oil, salt and garlic powder (I forgot pepper but I added it after), wrapped them in aluminum foil and threw them on the BBQ. We didn’t calculate the time well though so I actually didn’t eat any until after my pilates class, but they were also delicious. I wanted to keep the spices simple because I wasn’t sure how strong of flavour the hamburgers would be and I didn’t want the flavours to clash. I would definitely use fresh garlic next time (I normally do but I was too lazy this time…).
I’ve decided to start meal planning. I have attempted this before without success because I wouldn’t “feel” like making what I had already decided for that day. We’ll see how it goes this time around. I feel like I need to get organized for when this baby arrives so that we actually eat good food rather than last minute unhealthy meals…or eat out, which is expensive. I was pretty successful last week with my meal plan – I didn’t want to post it because I wanted to see how I did. I got all the groceries I needed for the week on Monday (after making the meal plan with my recipe book and the flyers close at hand). So here goes week two.
One thing I must add though is that I use it more of a guide line. We ate most of the meals last week that I had planned but not always on the days that I had planned them. I feel that this kind of flexibility is okay for me! I also noticed that we had a lot of leftovers…way more than we could eat in the one designated left over day, so I planned for 2 leftover days this week and hopefully we wont have to waste food.
MONDAY: Garlic Chicken and Spinach over Pasta and Slow Cooker Tomato Herb Bread
TUESDAY: Pad Thai Burgers with Peanut Sauce (recipe came with a coupon for VH Pad Thai sauce) and Roaster Potatoes – all cooked on our “new to us” BBQ!
THURSDAY: Slow Cooker Italian Herb Chicken on Rice
FRIDAY: Pork Kebabs, Couscous, Roasted Potatoes, and Salad (we’re thinking of having someone over this day, anyone interested?)
SUNDAY: Fathers Day – we may go out or I’ll make something that Tim requests
So that’s it! I hope it works out because I picked some delicious recipes to follow. None of them are online so I can’t link to them. But if they’re exceptionally delicious I’ll share them on here.
I’m supposed to go and do laundry today…we have to use the laundromat. But it’s absolutely pouring rain out and I don’t really want to go outside… It’s a bit of a predicament because we absolutely HAVE to do laundry today (Tim has no underwear left and we have no clean towels…). I might wait a bit longer and see if it clears up a bit. In the mean time I’m going to put that bread in the slow cooker (this is an experiment so we’ll see how it turns out)!

Tim and I had out 3 year anniversary on the 26th and it was wonderful. We spent the night out at the cottage and it was so relaxing and wonderful to have that time together without computer and phone distractions! Here are some photos of the evening!
What a wonderful time we had. We are looking forward to spending a lot of time out there this summer since we’re so close!
